4th 4th of July Recipes from Chef D

Chef Donato Colucico from Donato’s Fox Chapel stopped by the studio to give us some 4th of July recipes that are AMAZING!!!

“Cookin” Out  4th of July Chef D Style.

Red white Blue Blackened Burger

1# ground chuck  (75/25)

8 oz Maytag Blue cheese

1 sweet Vidalia onion sliced 1/8 inch thick

1 red vintage tomato or other ripe red tomato sliced ¼ inch thick

4 oz Cajun spice

4 oz horseradish spread

soft white Potato or Kaiser rolls

any other condiments you might like

portion the meat into 4 or 8 ounce patties depending on your people

put the cheese in the center inside of the patties

sprinkle the meat with Cajun spice and cook to desired doneness

just before done toast the rolls

top with the tomato, onion, and horseradish spread

Horseradish Spread

2 oz sour cream

2 oz mayonnaise

2 oz horseradish

½ tsp minced garlic

salt and black pepper to taste

mix well


Simple Grilled Salmon (or any other fish) and Scallions

1# shrimp

1 bunch scallions

1 cup citrus marinade

sea salt to taste

marinate the salmon and scallions (in separate bowls) in the citrus marinade for around 20 minutes

drain them, season them with the salt, and grill them both over an open flame until they are done

peal and eat and serve with Bloody Mary’s and extra virgin olive oil and lime wedges

also try this marinade on any chicken or pork

Citrus Marinade

½ cup fresh limejuice

¼ cup  fresh lemon juice

1/8 cup olive oil

1 tb fresh ground black pepper

1 tb chopped tarragon

1 tb chopped garlic

Grilled Salad

½ # Redskin potatoes cooked and quartered

1 seedless cucumber sliced 1/8 “

2 heirloom ripe tomatoes cut into quarters

1 pack strawberry tomatoes or cherry tomatoes

1 sweet Vidalia onion sliced

1 bunch fresh basil pulled apart

1 cup minced chives

1 cup red wine vinaigrette or  ( to save time a really great product is the Primadonna’s  Italian Dressing it is a really good one)

salt and pepper to taste

mix all ingredients about a half hour before your ready to eat

Berries and Balsamic

Wash and dry your favortite berries. Strawberries are the best

Drizzle them with some good Balsamic vinegar and a pinch of sugar

Let them sit for about an hour

Serve them with softened mascarpone cheese
